Star Thistle Honey (raw)

Scientific Name: Centaurea stoebe

Also known as spotted knapweed, hails from central NY.  This honey is produced by an Amish farmer who uses no chemicals in his bee hives.  

Try honeysuckle honey on chevre or parmisiano cheese!
